This year we had a surplus of honey early in the season, harvesting just after the sakura, (cherry blossoms) bloomed. Our rooftop apiary is surrounded by a grove of sakura at the Japanese Canadian Cultural Centre which distinctly adds to the floral notes of our honey.
Our honey is Raw and Unpasteurized meaning that it has never been heated, heightening the aroma, flavour and antioxidants.
We also only Minimally Filter our honey, which leaves behind traces of beeswax, propolis and pollen. This amplifies the floral notes of our honey and increases its health benefits. Over time, this may lead to crystallization which is a natural occurrence.
